Traditional Red Rice Pulao

A comforting pulao made with traditionally cooked red rice and seasonal vegetables.

Ingredients

Red Rice – 1 cup
Water – 2½ cups
Oil or Ghee – 1 tbsp
Onion (sliced) – 1 medium
Mixed vegetables (carrot, beans, peas) – ½ cup
Cumin seeds – 1 tsp
Bay leaf – 1
Cloves – 2
Salt – to taste
Fresh coriander – for garnish

Cooking Method

  • Step 1: Prepare the Red Rice
    Wash red rice thoroughly and soak for 30 minutes. Drain and keep aside.
  • Step 2: Sauté the Base
    Heat oil or ghee in a pan. Add cumin seeds, bay leaf, and cloves. Add sliced onions and sauté until soft.
  • Step 3: Add Vegetables
    Add mixed vegetables and cook for 2–3 minutes on medium heat.
  • Step 4: Cook the Pulao                                                                                                                                                                                                                                      Add soaked red rice, salt, and water. Cover and cook on low flame until rice is soft and water is absorbed.  
  • Step 5: Rest and Serve                                                                                                                                                                                                                               Turn off heat, rest for 5 minutes, fluff gently, and garnish with coriander.
