Ingredients
• Foxnuts (Makhana) – 1½ cups
• Paneer – 200 g (cubed)
• Onion – 2 medium (finely chopped)
• Tomato puree – 1 cup
• Ginger-garlic paste – 1 tbsp
• Cashew paste – 2 tbsp
• Turmeric – ¼ tsp
• Red chilli powder – ½ tsp
• Coriander powder – 1 tsp
• Garam masala – ½ tsp
• Fresh cream – 2 tbsp
• Ghee / Oil – 2 tbsp
• Salt – to taste
• Fresh coriander – for garnish
Cooking Method
- Step 1: Roast the Foxnuts
Heat ghee in a pan and roast foxnuts on low flame until crisp. Remove and keep aside. - Step 2: Prepare the Gravy
Heat oil in a pan, add onions and sauté till golden. Add ginger-garlic paste and cook till aromatic. - Step 3: Add Tomato & Spices
Add tomato puree, turmeric, chilli powder and coriander powder. Cook till oil separates. - Step 4: Add Paneer & Foxnuts
Add paneer cubes, roasted foxnuts and cashew paste. Mix gently. - Step 5: Finish the Curry
Add water as required, simmer for 5 minutes. Finish with garam masala and cream. Garnish and serve hot.
Chef’s Tips
• Roast foxnuts gently to avoid bitterness
• Add paneer at the end to keep it soft
• Cashew paste gives richness—do not skip
• Tastes best with naan or jeera rice
